Keto Modak/Kudumulu/Gujiya

Makes 8 pieces.
Ingredients:

Paneer -200gm
-
Coconut flour -50gm
-
Psyllium husk -10gm
-
Baking powder -1/2 tsp
-
Ghee -2tsp
-
Hung curd -1tsp
-
Salt : 1/4 tsp
-
Water as required
For stuffing :
-
Yellow Capsicum or Yellow pumpkin -150gm
-
Almond flour -1/2 cup
-
stevia- 2 tsp ( adjust as per ur sweeteness) or any sweetener of choice.

Cardamom powder -1 tsp
-
Ghee -1 tsp.
For topping :
-
2 tsp ghee( optional).

Directions:
For stuffing
🍯Heat a nonstick pan and add ghee to it.
Then add the finely chopped yellow capsicum and saute it.
Add salt to it .
🍯Cover and cook for 5 mins or till capsicum turns soft
🍯Remove the lid and add the almond flour
Saute for 2-3 minutes and then add the cardamom powder.
🍯Transfer the mixture into a mixer jar and make a paste..
Take out the mixture in a bowl and let it cool. Then add stevia and mix well .
If you feel the stuffing paste is runny , add a table spoon of almond flour and refrigerate for 10 min.
( If using yellow pumpkin, peel it, steam it, drain the excess water, and mash well with the back of a spoon and adjust the sweetness with stevia)
✳️For Kudumulu/ gujiya .
🍯In a mixer jar , add all the dry ingredients.
🍯Then add paneer, ghee, and hung curd, blend till soft dough consistency .
✳️ Can add 💦little water to it,if it is not soft. Then knead this dough for 1-2 minutes.🍯Divide the dough into 8 portions.
For rolling and stuffing
🍯Take 2 parchment sheets or butter paper/ plastic sheet.
🍯Roll them Into 8 small sized rotis with rolling pin . Make sure you Keep the edges of roti thin , and centre part roti little thick ,this enables the stuffing not to ooze out from the centre.

Cooking
🍯 Grease the microwave idli maker or idly cooker and transfer these Gujiyas / kudumulu/Modaks.
🍯Steaming instructions:
Microwave: 3 Mins on high
Idly steamer: 5 minutes on high flame .
🍯Tastes great when served hot .
Top with 2 TSP ghee over them before serving.
🍯Note: The paneer dough should be soft and holdable for rolling into roti, It should not be runny.
