For making onion pakodas , can use any variety of onions – be it red onions, yellow onions or white onions.
Just make sure to slice the onions thinly to get a crisp texture

-
In a mixing bowl, add sliced onions, chilli, coriander curry leaves, mint, salt, pepper, chilli powder, jeera and mix well, with your hands. This step allows the water in the onions and greens release, and helps in binding the flours, and cheese together.
Donot add water.

-
Now add, almond flour, flax powder, grated cheese to the above mixture, mix well with your fingers to form a holdable mixture.

-
Grease a non stick baking pan .
-
Shape the dough into 6 pakodas or thin patties( shape doesn't matter here, its only the holding of dough, which is important).

-
Place these pakodas on greased baking pan, brush with olive oil on top, bake at 170 c for 15 -20 minutes. Turn these to other side and bake again for 10-15 minutes, or till you get the crispy golden brown tinge .

-
Final baking time totally depends on your oven, understanding your oven is very important.

-
If, air-frying, then air fry at 180 degrees celsius. Preheat air fryer for 10 minutes and then air fry for 10 min or till crisp. In between remove the air fryer pan and shake or turn over each pakoda..

NOTE:

-
Donot add water while mixing the dough.
-
Shaping them into thin patties allows them to bake crispy .
