Bottlegourd-Jeera soup
This recipe has a special place in my food menu, after I switched to low carb lifestyle. The soupy version of this vegetable will be liked by everyone in the family. The masalas that goes into this soup makes this a versatile dish particularly, the flavours of dry roasted jeera or cumin, green chilli, and a tinge of lemon into this soup hits the taste buds of every soup lover.

Ingredients:
🍵Bottlegourd-450gm peeled, deseeded ,cubed
🍵200ml coconut milk
🍵Ghee -3 tsp
🍵1 cup water.
For Masala :
🥄3 teaspoons coriander seeds.
🥄2 tsp jeera or cumin seeds.
🥄1 small green chilli.
🥄1 tablespoon lemon juice.
🥄salt: as required
🥄Chopped coriander-1/2cup.
INSTRUCTIONS:
👉Peel ,cut and pressure cook bottle gourd until soft.
👉Meanwhile, take a shallow pan, and dry roast the chili, coriander seeds, jeera together. transfer into mortar and pestle, and make a coarse powder and keep it aside .
👉 once the cooked bottle gourd is cooled down a bit, take a hand blender and blend into puree . ( If you don't have hand blender, can do in a mixer jar , but make sure the cooked bottle gourd is cooled ).
👉To this puree , add some water, salt and ground jeera masala..
(Adjust Water ,according to desired consistency . I prefer this soup a bit thick in consistency )
👉Boil for 5 minutes , till the flavors of ground masala is nicely incorporated.
👉 Once boiled , switch off the flame , add lemon juice , coconut milk and 🌀mix well ..
serve it with ghee and finely chopped coriander or spring onions.
