Vangeebath or Brinjal Rice (keto/low -carb)
Vangeebath or Brinjal rice , is a traditional, authentic karnataka delicacy, served either for breakfast or for lunch.
In this post, I added an easy to make no grain brinjal rice or vangeebath , prepared with riced cauliflower and vegetables . When it served with hung curd or greek yogurt raitha, it tastes absolutely delicious.

Ingredients
Green brinjal -1 ( cut into 2inch long )
Capsicum -1medium ( cubed) can use any colour.
Tomato -60gm
Onion-1medium . (Cubed pieces)
Green chilli -1(slit into 2pieces)
Vangeebath masala powder- 3tbsp (Everest). If you dont have it , can substitute with 1.5 TBSP Sambar powder, 1.5 TBSP Garam masala powder.
Riced cauliflower -250gm
For tempering
Ghee -3 Tsp
Mustard seeds-1/2tsp
Jeera-1/2tsp
Hing(optional)
Curry leaves-3-4
Salt to taste
Directions:
1. Heat a non stick pan , add ghee, mustard seeds, jeera .. tonce mustard seeds splutter, add curry leaves, and hing (optional )..
2. To this, add cubed onions , green chilli, capsicum, brinjal, tomatoes, stir for few seconds , till all the vegetables are half- cooked . Once veggies are half- cooked , add salt , and cook for 2-3minutes.
3. Now add the riced cauliflower[check my recipe section for Cauli rice}
( If you are using frozen riced cauliflower or refrigerated one .. I suggest you to microwave it for 2-3minutes .. before adding into any recipe )
4. Cook for 2minutes on medium flame .
5. To this, add vangeebath masala , I used Everest Vangeebath Masala powder .. to the cooked rice , mix well till the masala powder is nicely incorporated ..
6. Cover with a lid and cook for another 2minutes .
7. Serve it with hung curd cucumber raitha or radish raitha
Note : If using frozen riced cauliflower, I would suggest to microwave the frozen cauli rice for 2-3 minutes with lid on , before adding into any keto rice dish.
Can top this with ghee fried almonds, or 1 tbsp of butter or heavy cream.
