Paneer Flax Roti

Vegetarian Keto -Friendly [Gluten- free]
This roti is  highly packed with proteins, healthy fats, and rich in fibre.
If you are tired of eating cubed paneer, or if you donot like eating paneer, this is the best way of eating paneer  and flax  in a single meal. It tastes great with a simple onion or cucumber raitha and a dash of achar or pickle at the side.
Trust me, you gonna.. love this ,if you are on a strict keto diet,with all the macros well distributed.

Ingredients:
  • Paneer / Tofu: 100 gms.
  • Flax seeds powder (golden/brown) : 2 Tbsp.
  • Psyllium Husk powder: 3 Tsp.
  • Ghee : 2 Tsp.
  • Fresh curry leaves: 1/2 cup.
  • Green chillies: 2 to 3.
  • Ginger: 1 Inch piece.
  • Jeera seeds/Ajwain: 1/2 Tsp
  • Hot water : 1/2 cup.
  • Salt: As per taste.

Directions:
  • In a mixing bowl, add flax seeds powder,( I used golden flax powder here) you can also use regular brown flax powder ), psyllium husk powder, hot water and mix all together to form a dough.Keep it aside for 10 minutes. Please note that water should be hot, otherwise the binding will not be good.

  • Meanwhile, in a blending jar blend, jeera, curry leaves and  ginger into a coarse paste. Do not add water while blending.

  • Now, add this flax dough, coarse green paste,salt, to the curmbled paneer,  and knead well , until you get a smooth dough.it just takes few minutes to knead this.

  • Divide this dough into 2 small balls.

  • Now, roll each dough into a roti or tortilla with the help of parchment paper or butter paper or plastic sheet. No need of applying oil while rolling this,  as the dough has flax, paneer which have natural oils.

  • Transfer this carefully on to a preheated non stick pan , keep  a lid on top,  and cook on medium flame ,remove the lid and turn to other side, cook  till golden brown. (Donot cover  with lid while cooking other side).

  • Serve it with cucumber or radish raitha.
