Curd Rice
Keto curd rice (keto, low carb, paleo friendly)
Keto curd rice is one of the keto rice dish, made with riced cauliflower, greek yogurt, tempered with mustard , jeera, curry leaves. As like regular curd rice you can make many variations according to your liking, once you get the hook of making the basic style.

Ingredients

Cauliflower-250gms or Riced cauli -150 gms.

Greek yogurt -100gms
-
Ghee-2tsp
-
Green chillies-2
-
Black pepper corn-4-5(optional)
-
Dried red chillies -2
-
Curry leaves as per requirement

Mustard seeds-1/2 tsp
-
Jeera seeds-1/2 tsp
-
Hing or Asafoetida -pinch . (Optional)

Directions:
Keto curd rice takes only 10 minutes to prepare ,if you have ready Riced -cauli or cauli-rice , and greek yogurt in your refrigerator.

Wash the cauliflower , grate it ( with small attachment ), squeeze out the water from the grated cauli rice .

Take a microwave safe bowl , warm the cauli rice for 45 -60sec .

Now , mix greek yogurt or hung curd , salt to the riced cauliflower. Add water according to consistency .[ CHECK MY RECIPES SECTION FOR HUNG CURD OR GREEK YOGURT]

For seasoning :

In a pan , add 2tsp ghee, once its heated, add mustard, jeera , dried red chillies, wait till the mustard seeds splutter ,then, add curry leaves, green chillies, hing at the end . Transfer this seasoning to the curd rice .

Tastes amazing with a dash of lemon pickle/ Amla pickle.​
Variations in tempering : Can add peanuts/ almonds for tempering.

For keto vegan curd rice : Substitute greek yogurt or hung curd with coconut yogurt/ peanut curd. For tempering substitute ghee with olive oil.
